Stumbled in to this video tut of a guy making a snippet of a metal tune in Music Maker (a few versions back). I don't much care for metal music, but that's ok. He does a nice job showing the basics of creating your own loops directly on the piano roll.

It's not a finished mixed and mastered song, but it's only an eight minute video. Note that you don't have to be a musician or know how to read music.

Your ear will tell you if a note is too high or too low. This same basic process (composing on the piano roll) applies to all daws that I know of.
